What is your favorite summer activity and why?
Our evening picnics at the park! There is something so wonderful about the mellow happiness that happens during and after an end-of-day park visit. Besides, then daddy can come too! J
What three words would you use to describe your blog?
Cheerful, Entertaining, Sentimental
Favorite hobby or way to relax?
I love, love, love Tae Kwon Do! It is my activity to escape, recharge, and get some (ok, A LOT OF) exercise!
What is one thing people probably don’t know about you?
I am a part-time hairstylist! Color is my fave!
Favorite summer recipe!
My Great Aunt Ellen’s Scrumptious Lemon Bars are sure to sweeten up any summer BBQ!
Crust:
2 c. flour
1/2 c. powdered sugar
1 c. butter (real butter is essential!)
Melt butter in 9×13” pan. Mix flour and powdered sugar. Pour into pan and stir with butter. Press firmly into pan. Bake at 350 degrees for 20 minutes.
Filling:
4 eggs
4 Tbsp. lemon juice (fresh is best! Add some lemon zest for extra taste if you wish!)
2 c. sugar
4 Tbsp. flour
1 tsp. baking powder
1/2 tsp. salt
Beat eggs and lemon juice. Sift sugar, flour, baking powder, and salt. Add to beaten eggs. Pour over crust while hot and bake for 25 minutes at 350 degrees. sift powdered sugar over top when cool.
Cut into squares and enjoy!
**Tip: Do not mix the sugar and eggs together too early while the crust bakes — the sugar chemically “cooks” the eggs if it sits too long.
